Cardamom, Brown Butter Carrot Cake, Espresso Frosting

Espresso and Cardamom Spiced Carrot Cake (gluten free)

 Spiced Carrot Cake

1 cup - Unsalted butter, browned
3 cup cup for cup gluten free flour  
6 eggs
1.5 cup white sugar
1 cup brown sugar
3 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp cardamom
1/4 cup olive oil
1/4 cup vegetable oil
2 tsp vanilla extract
4 cups shredded carrots loose pack

Method: Preheat oven to 350F. Butter and flour a 9’’ baking pan.

In a mixer add eggs, sugar and mix until fluffy. In a small bowl combine dry ingredients, four, baking powder, baking soda, salt, cinnamon, cardamom and clove. In another bowl whisk oil, butter and vanilla.

When eggs and sugar are fluffy, drizzle the oil into the mixer and continue to whisk until light and fluffy. Fold dry ingredients into the mixture and stir in carrots. Bake for about 30 min or until toothpick comes out of cake clean.

Espresso Frosting

16 oz crème cheese
2 cup powdered sugar
2 stick butter
4 tbsp Nespresso espresso
2 tsp ground cardamom
½ cup candied walnuts crushed, for garnish

Method: Make frosting by beating the cream cheese and sugar. When combined, add the butter, Nespresso espresso and cardamom.

To assemble: Remove the cake from pan and let cool. Cut into squares and then divide squares in half. Spread some icing between two layers, then generously spread icing over the top and garnish with candied walnuts.

The salad is made of shaved fennel, blood orange, cara cara, jalepeno, and a lemon poppy dressing. Underneath the fish is some braised fennel on top of a fennel puree and fennel frond oil... ohhh Menu testing

Simple, delicious and great for allergies and health - onion and local honey is power combo 🍯 Try it out yourself; Quarter your onions, drizzle with olive oil and sprinkle with salt. Grill on each side till golden and then finish with a squeeze of lemon and zest. Drizzle with honey or put a swoosh on the plate to dip into! I also took some of the onion greens and sliced them for a nice pop of green 🌱

🍜Jade rice noodles, carrot, miso and ginger dressing, cilantro carrot salad. SEE the RECIPE below! Another day, another dish. Gettin' down vegan style with the homie @adamkenworthy Recipe: Carrot Ginger Sauce🍜 Carrot - 3 cups Miso - 1 tbsp Ginger - 1.5’’ nob Lime - 2 tbsp Olive Oil - 2 tbsp Water - to think *Combine all ingredients in blender and blend till smooth. Carrot Salad🥕 Carrot, julienne - 3 cups Cilantro, chiffonade - 1/4 cup Lime juice, olive oil and salt to taste *Peel and julienne carrots, toss with chopped cilantro and season to taste with lime juice, olive oil and salt. Blistered Sishito🌶 Shishito pepper - 12 each Olive Oil - 1 tbsp *In a hot pan add peppers and don’t touch until bottoms begin to brown, flip, keep in pan for 30 second and remove to let cool. Chop and fold into noodles. Jade rice noodles: 4 cups Cook so they still have a bit of a bite and texture! This way they won't fall apart while mixing.
